Seriously the easiest soup ever. So tasty and the kids lap this up like there's no tomorrow.
We normally have this with some baking powder biscuits.
Yummy Yam Soup
2 medium sized yams
1 large onion
4-5 tbsp of olive oil
4 cups of chicken stock (I have the Epicure chicken bouillon that mixes with water, it has a nice flavour)
salt and pepper if you want, I never do
half and half cream
1) Take the yams in the skin and cut a few slits in the top and place on cookie sheet covered in foil.
2) Bake at 400 degrees Fahrenheit for a hour.
3) After the yams are done, cut up the onion and add onion to the soup pot with olive oil.
4) Cook the onions until they are light brown in color.
5) Add the yams to the pot after they have been cut in half and the insides are scooped out.
6) Add the chicken stock and bring to a simmer.
7) Using a potato masher or hand blender, blend the yams and onions together. (I suggest taking off the burner for this so the soup doesn't bubble all over you)
8) Put some into a bowl and add a little cream on top, stir and enjoy!

This soup actually tastes kind of sweet. Say like sweet potatoes. I think that is why the kids love it. And as for the onions you would never know they were in there but they definitely add to the flavour. Brad says it's better with the onions compared to no onions. The longest part about this recipe is the yams cooking in the oven everything else is done in 15-20 minutes not even!
