I made these muffins last night because I had some overripe bananas to use up.
These muffins are so good and when they are baking the whole house smells awesome.
So if you like bananas, peanut butter and chocolate chips all together, these are the muffins for you.
Banana PB Muffins
2 cups all purpose flour
1/3 cup packed brown sugar
1 tbsp baking powder
1/2 tsp salt
1 large egg
3/4 cup mashed overripe banana (about 2 small)
2/3 cup peanut butter
2/3 cup milk
2 tbsp cooking oil
1/2 cup chocolate chips
Measure first 4 ingredients into large bowl. Stir. Make a well in the centre.
Beat next 5 ingredients with whisk in medium bowl. Add to well.
Add chocolate chips. Stir until just moistened. Fill 12 greased muffin cups 3/4 full. Bake in 375 Fahrenheit oven for 18 to 20 minutes until toothpick inserted in centre of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool. Makes 12 muffins.
And let me tell you that they will not last long so make a double batch!
